Turmeric Poached Egg + Spinach Cashew Pesto Toast

I made this breakfast twice this week, once for my Dad and another for my mother-in-law. They loved it!

Super fancy breakfast and pretty easy to make!

Turmeric Poached Egg + Spinach Cashew Pesto Toast

2 Eggs
1 tsp Turmeric
2 slices of whole wheat toast
Microgreens
Spinach Cashew Pesto (recipe below)
1/2 avocado
Topped with cilantro, salt & pep

Turmeric Poached Egg

  • INGREDIENTS 

  • 1-2 raw eggs

DIRECTIONS

1. Fill a small pot 3/4 full and bring to a boil. Add 1 tsp of turmeric to boiling water and mix.
2. Crack egg into a small bowl.
3. Slowly pour egg into boiling water and then turn down to heat to low.
4. Cover and let it cook for 2-4 minutes depending on how you like your yolk.
5. Scoop out egg with a large spoon and allow the excess water to drip off.

Spinach Cashew Pesto

  • INGREDIENTS 

  • 1 cup spinach
    1/2 cup cashews
    1/2 cup basil
    2 garlic cloves
    1/4 cup avocado oil
    1/4-1/2 cup water
    Salt & Pep

DIRECTIONS

1. Place all ingredients in blender and blend until smooth.
2. Add more water to reach desired consistency.

or if you don’t have basil try this:

Jalapeno Cilantro Pesto

  • INGREDIENTS 

  • 1/2 cup spinach
    1/4 cup cashews
    1/4 cup cilantro
    1 garlic clove
    1/4 cup avocado oil
    1/4-1/2 cup water
    Salt & Pep

DIRECTIONS

1. Place all ingredients in blender and blend until smooth.
2. Add more water to reach desired consistency.
