Tilapia Tacos with Mango Pineapple Salsa

Tilapia tacos + Mango Pineapple salsa is an easy and delicious dinner without really trying. The most time consuming part of this meal is chopping all the ingredients for the salsa, it’s all downhill from there!

I love that you can use any type of protein, so don’t feel limited to just tilapia. I’ve tried this meal with shrimp, chicken, and steak – all of it is amazing. For a meatless version try it with black beans.

Mango Pineapple Salsa

  • INGREDIENTS

  • 1 Mango, diced
    1/2 cup Pineapple, diced
    1 Lime, juiced
    1 Red Bell Pepper, diced
    1 Serrano Pepper, minced
    Salt & Pepper

DIRECTIONS

1. Wash and cut all ingredients.
2. Combine in a medium sized bowl.

Tilapia Tacos

  • INGREDIENTS

  • 2 Tilapia Fillets, grilled (seasoned with salt, pepper, garlic powder)
    Corn Tortillas

    Mango Pineapple Salsa
    Spicy Crema (recipe here near the end of the post)

DIRECTIONS

1. Heat skillet and lightly coat with olive oil.
2. Place the tilapia on a plate and season one side with salt, pepper, garlic powder
3. In the heated skillet place the seasoned size down then season the other side
4. Grill tilapia for 3-4 minutes on each side.
5. Place the grilled tilapia in a bowl and shred with 2 forks.
To assemble: warmed corn tortilla, 1-2oz tilapia per tortilla, mango pineapple salsa, spicy crema
