I thought I’d never say this, but I’m digging ginger!
Every week I grocery shop I always try to switch it up, so this week I bought cherries, sweet peppers, and ginger. The reason I constantly switch it up is because I want to get a variety of nutrients.
I believe the easiest way to eat 1 cup of spinach is by making a smoothie! I prefer smoothies over juices because I get all the fiber. Why is fiber so great you ask? Fiber lowers the risk of colon cancer, you poo more, and helps control blood sugar. Bam!
Ginger Spinach Green Smoothie
2 cups unsweetened almond milk
2-2.5 cups of spinach (be brave, you barely taste it!)
1 frozen banana
1/2 cup frozen mango
2-3 tsp ginger (a little goes a long way)
4 tbsp ground flax seed
- 1. Combine all ingredients in blender. If you have to baby your blender, blend liquid and spinach first and then add remaining ingredients.
2. Blend until smooth.
3. Enjoy! If you are feeling wild, add chia seeds and a fancy straw. Serves 2 healthy people!
