The Best Shrimp Salad of Your Life

I have made the best shrimp salad of my life and you need to make it! This salad has so much flavor and left me feeling very satisfied. Unlike other salads, this will fill you up and leave you with a happy belly.

Shrimp Salad

INGREDIENTS

1/2lb of Shrimp, peeled and devained
2 tbsp Butter, melted
Small handful of cilantro, chopped
Small handful of basil, chopped
3 Garlic cloves, minced
1/2 Lime, juiced
Salt & Pepper
3-4 tbsp Shaved parmesan
2 cups of Greens
1/2 cup Cherry tomatoes, sliced in half
2/3 cup Quinoa
2 slices of Sourdough bread, toasted

Honey Lime Vinaigrette

INGREDIENTS

1/2 lime, juiced
1 tbsp honey
1 tsp olive oil
Salt & Pepper

DIRECTIONS

  1. 1. Preheat oven to 400*F.
  2. 2. In a large bowl combine shrimp, butter, cilantro, basil, garlic, lime juice, salt and pepper.
    3. Line a baking sheet and spray with olive oil. Spread shrimp and top with parmesan.
    4. Bake shrimp until fully cooked, about 6-8mins.
    5. Recipe serves 2. For one person’s plate: 1 cup greens, 1/4 cup cherry tomatoes, 1/3 cup warm quinoa, shrimp, 1-2 tbsp honey lime vinaigrette, and a slice of toasted sourdough bread.
