Nothing makes me happier than making breakfast in the morning. I seriously love breakfast, almost more than Joey! 😉 There honestly is no better feeling than experimenting with a new recipes and it tasting delicious. I love using fresh herbs and colorful ingredients. It is so easy for me to whip up new recipes when I have have the right ingredients on hand.
1 egg white
Cilantro, finely chopped
1/2 tsp feta cheese
Cherry tomatoes, diced
Directions: Preheat oven to 425*. Beat eggs in a small bowl. Chop veggies (could use anything your heart desires). Combine chopped veggies with eggs and mix. Spray ramekin and add veggie/egg mixture. Top with avocado and feta. Bake for 15minutes. Serves 1.
Some tips while you are at the store: Aim to have half of your cart full of fresh fruits and veggies. The biggest battle is in the store, not at home, so make those healthy choices and read the food labels. Whenever I’m at the store I am constantly checking labels. I look at saturated fat, fiber, sugar, protein, and obviously the ingredient list. Note that the beginning ingredients on the list are from largest to smallest, so if the first ingredient is sugar just put it down. Also, shop on the outside of the store, all those aisles in between are processed, high in sugar and saturated fat. If you must go in the middle aisles, make sure to get what you need and that’s it (whole wheat pasta, oatmeal, whole wheat flour etc). I want to share what my cart and fridge look like…lots of fruits/veggies, lean meats, yogurt, and whole wheat products. My freezer has frozen fruits/veggies, fish, lean meat and whole wheat bread. Next time you are at the store stay strong and make those healthy choices, so that when you are at home you have no choice but to make yummy healthy recipes! 🙂 <3 Fit Andy
