1 whole wheat english muffin
1/2 avocado, mashed
Handful of cilantro, finely chopped
Directions: In a small pot fill water 3/4 full and bring to a boil. Meanwhile crack egg into a small bowl, be careful to not break the yoke. Bring the boiled water down to a simmer and slowly pour the egg in. Let sit for 3-4 minutes. Place the egg on a paper towel to drain the water. Toast english muffin, mix avocado with cilantro, and put it all together to make a delicious breakfast sandwich. With a side of Rosemary Breakfast Potatoes (similar to the Breakfast Potatoes) and cantaloupe.
