Pink Poached Egg

Pink Poached Egg + Avocado Toast

  • INGREDIENTS

  • •Pink poached eggs:
    1 capful of vinegar (any vinegar)
    1/4 cup beet juice or 1 beet juiced (no juicer? just boil beet until softened and blend with little water)
    1 tsp turmeric
    1 egg
    •1 slice of Boston Sourdough Bread, toasted 
    •Microgreens
    •1/2 Avocado, sliced

DIRECTIONS

1. In a small pot fill halfway with water and bring to a boil. Add 1 capful of vinegar and beet juice. Slowly drop in egg and boil for 3-5 minutes (3 minutes for runny yolk).
2. Toast bread, microgreens, sliced avocado, pink poached egg. Top with salt, pepper, & red pepper chili flakes.
