Picnic At The Beach

photo 5Living in San Diego feels like a dream sometimes, the weather and beautiful beaches are amazing. So, I make sure to take full advantage of living here and do my best to go to the beach 1-2 times a week. I love packing a picnic of healthy foods and spending the day in the sun. Nothing makes me happier!

I grew up always going on family adventures, whether it was hiking or spending the day in San Francisco, and my Mom was always prepared for picnics. We would have fresh fruit, sandwiches, and all that good stuff to feed our family of 7.

Fast forward to my life now and I’m still just as obsessed with family picnics. I feel like I’m a pro at picnics, so I thought I’d share some of my expertise with you all :)

1. Make a healthy and filling breakfast before you go to the beach. Below is a Spinach Smoothie, Omelet Taco and greek yogurt with my homemade granola.

Ingredients:
1 cup coconut water
1 cup spinach
1/2 cup frozen mango
1/2 cup frozen pineapple
1 tbsp flax seed

Directions: Blend all ingredients. Makes 12 ounces.

Omelet Taco
Ingredients:
1 corn tortilla
2 eggs, mixed
Handful of spinach
1/2 avocado, sliced
Handful of cilantro

Directions: Heat a small skillet and spray with oil. Pour in eggs and cover over medium heat for about 2-3 minutes. Once the omelet has set, place veggies on top and fold omelet in half. Meanwhile, heat tortilla. Put it all together and you got yourself an omelet taco.

2. Pack a healthy lunch that includes plenty of carbs and protein. Bring snacks like fresh fruit or nuts. We had a burrito bowl type thing going on, it looks random because I whipped it up quickly with whatever I could find in the fridge. It included: kale, spinach, corn, cilantro, red onions, feta cheese, brown rice, cherry tomatoes, avocado, grated carrots, & lemon as dressing. We had cilantro & lime tilapia, with a hint of cayenne. It was delicious and filling!

I didn’t grow up in SD so I feel like I’m so grateful for living here now and I take full advantage 😉
