Orzo Salad

1/2 cup whole wheat orzo (doubles in size when cooked)
1 cup water
1 cup chicken broth
1 cup cherry tomatoes, cut in half
1 avocado, sliced
2 cup greens
1 grilled chicken breast, cut into cubes
2 tbsp feta cheese
1 lemon
2 tbsp olive oil
Dash of salt, pepper & thyme

Directions: In a small pot bring water and broth to a boil. Add orzo and cover, stirring occasionally. Boil for 9-10 minutes. Grill chicken breast (I marinated chicken in lemon juice, pepper and salt). Meanwhile, whisk together dressing: lemon, olive oil, salt, pepper and thyme. Once everything is done, place 1 cup of greens on plate, pour 1 cup orzo, & top with 1/2 avocado, 1 tbsp feta and 1/2 cup cherry tomatoes. Pour 1-2 tbsp dressing over salad. Serves 2.
