When I was little my Mom would make mini blueberry muffins. The smell would fill the house and I just loved how tiny they were. And they tasted sooo good!
When I saw a mini muffin tin at the store the other day I HAD to buy it. I want to be able to give my daughter the same kind of memories and bite sized goodness too.
This recipe is made with simple/real ingredients, which is something I aim for with all of my meals. The whole wheat flour provides healthy carbs, the greek yogurt provides protein and healthy bacteria for your gut, and eggs for protein & other nutrients.
My favorite part about these pancake bites, besides how tasty they are, is that I can freeze them. Once they are baked I let them cool and then freeze in a large ziplock bag.
Mini Chocolate Chip Pancake Bites
- 2 cup whole wheat flour
1 & 3/4 cup unsweetened almond milk
1/2 cup plain greek yogurt
1 tbsp baking powder
1. Mix all the ingredients in a large bowl.
2. Spray mini muffin tin and fill with batter.
3. Bake at 350*F for 15mins
Makes ~18 bites
