Lentil Soup

The only reason why I ever bought lentils was because of its nutrition content. I remember my nutrition professor always talking about how healthy legumes are.

And recently hubs has been begging for lentil soup, no idea why 😂 …but to my surprise it came out so bomb. And when you make this you better serve it with a side of fresh sour dough bread (I get mine from whole foods and have then slice it)!!!

Nutrition facts:14g of fiber, 12g protein, 30g carbs, 20mg sodium in 1/4 cup dry lentils! DAMNNNN!!

Lentil Soup


    • 8 cups vegetable broth (low sodium)
      2 cups dry lentils (I did 1 cup red & 1 cup green)
      1/2 onion, diced
      2 garlic cloves, minced
      4 celery stalks, sliced
      2 large carrots, diced
      2 small yellow potatoes, diced
      salt & pepper
  • Serves 6 people


1. Cut all veggies.
2. In a large pot bring broth and lentils to a boil.
3. Add remaining veggies and simmer for 1 hour uncovered. Stir every 15-20 mins.



It is soooo good! Had leftovers for the week and it continued to taste better and better!! Enjoy xo
