This week I didn’t make a grocery list with meal ideas like I normally do. I just didn’t get around to doing it and we needed to go to the grocery store asap. I ended up focusing the store trip on getting tons of fruit, veggies, and lean protein. I always keep our whole grains (quinoa, whole whole wheat pasta, barley etc) stocked so I don’t have to buy these too often.
Anyways, I had no meal planned for this night and I ended up making this Kale Yeah Bowl that knocked hubs socks off. I don’t know if it’s a gift or not, but I can make anything out of nothing in the fridge! I know what works well together and that I need all macronutrients (carbs, protein, fat) to make a solid meal.
Kale Yeah Bowl
3-4 cups of Kale (precut bag)
1/2 cup uncooked Barley (10 Minute Barley from Trader Joes)
3 Chicken Sausages (spicy jalapeno flavor from Trader Joes)
2 Zucchinis, spiralized
1 can White Kidney Beans, drained & rinsed
2-3 tbsp avocado oil
Optional toppings: hummus, avocado, avocado tahini sauce (tahini, avocado, avocado oil, lime, garlic powder, salt & pep)
1. Bring a small pot of water to boil and cook the barley according to package.
2. Meanwhile, grill chicken sausages in a small skillet.
3. In a large skillet heat oil and saute kale until it begins to darken and soften. Then add spiralized zucchini and kidney beans until warmed up.
4. To assemble for one serving: scoop of barley, 2-3oz of chicken sausage, lots of kale, zucchini & beans.
