Homemade Egg McMuffin + Avocado Flower

A couple years ago I made a Healthy McMuffin (recipe here) but a lot has changed since then. I absolutely hate turkey bacon and I rarely eat Canadian bacon. So, I decided to make one with fewer ingredients and an even healthier version of it.

This is as simple as an Egg McMuffin can get. The best part is the avocado flower!!

Homemade Egg McMuffin


1/2 whole wheat english muffin
1 baked egg seasoned with red pepper flakes + pink himalayan salt
1/2 an avocado made into a flower
2 Basil leaves, sliced into thin strips


  1. 1. Crack egg and place inside an oiled ramekin. Bake for 12-15 minutes at 375*F (12 mins is a more runny yolk)
  2. 2. Meanwhile, make the avocado flower (directions here)

  4. 3. Once the egg is cooked top with red pepper chili flakes, salt, and fresh basil
    4. To assemble: toasted whole wheat english muffin, seasoned egg, and avocado flower.
  5. Serves 1 person (if you need the extra carbs use 1 whole english muffin instead of half)
