I love greek yogurt and what makes it even better is some crunchy granola to go with it. I always bought granola in the store, until I started turning the box around and looking at the nutritional facts. They are loaded with sugar and other things I didn’t want to have in my food. So, I decided to make my own. I make this recipe each week to have as a snack in between my larger meals. Turn those boxes around and start looking at what is in your food. Just because it says organic or natural does not mean it is healthy! Take the step in the right direction and make it yourself because it’s cheaper and healthier!
2 cup old fashioned oats
1/2-1 cup of nuts (cashews, pumpkin, pecans, sunflower seeds, sliced almonds)
1/3 cup coconut oil (or olive oil)
1/4 cup honey
Optional: coconut flakes, raisins, cranberries, homemade dried fruit, cinnamon, chia seeds
Preheat oven to 350*. Line large baking sheet with parchment/foil and spray with oil. In a large bowl mix all ingredients together. Spread granola in a thin layer on the sheet. Bake for a total of 14 minutes, tossing halfway through at minute 7 to evenly bake (watch closely because it can easily burn). Allow granola to cool for at least 15 minutes. Store in an airtight container.
