2 healthy Banana Bread Recipes:
The first banana bread recipe is the one I make the most. The ingredients are minimal and I usually have them all on hand. This banana bread recipe is amazing! And the best part is it gets better as it sits longer, I’m telling you there is nothing better than day old banana bread.
1/3 cup olive oil
1/3 cup honey (I’ve made it with 1/8 cup and it’s just as good)
4 ripe bananas, mashed (or 1 cup of mashed bananas)
1 3/4 cup whole wheat flour
1 tsp baking soda
1/4 cup hot water
Optional: Chocolate chips (add a little to batter and to the top before baking)
Directions: Preheat oven to 325*F. In a large bowl mix oil and honey. Then add eggs and mix. Stir in flour, baking soda, and hot water. Pour batter into an oiled bread pan and bake for 55-60 mins. Once it’s cooked (use the toothpick method) let cool for 15-20 mins. *Since this bread is sooo fresh you must consume within 3-4 days otherwise it will mold 🙁
Second Banana Bread Recipe
Banana bread is my favorite, so of course I had to make a healthy version of it. Past banana bread recipes of mine were full of white flour, heavy cream & sugar. That has now changed to whole wheat (easy swap), almond milk & coconut sugar. This recipe is amazing and will knock your socks off. It’s moist and so banana-ie!
3 very ripened bananas
1/3 cup unsweetened applesauce
1/3 cup honey
3/4 cup almond milk
1 tsp vanilla extract
1.5 cups whole wheat flour
1 cup oats (I used old fashioned)
1.5 tsp baking powder
3/4 tsp baking soda
1 tsp ground cinnamon
Optional Toppings: Chocolate chips & sliced bananas
Directions: Mash bananas in a large mixing bowl. Add applesauce, honey, egg, almond milk & vanilla extract. In a separate bowl, mix the remaining dry ingredients, whole wheat flour, oats, baking powder, baking soda, cinnamon. Add wet ingredients with dry ingredients and mix. Pour batter into an oiled loaf pan and top with chocolate chips and banana slices, because it’s cute! Bake in oven at 350*F for 60-65 mins. Enjoy!
