English Muffin Burger & Cajun Fries were inspired by my good friend Ashleigh over at Daily Cup of Asheejojo. This meal was beyond amazing and will have to be a new go-to meal!
If you haven’t noticed already but most of my recipes are either turkey meat or chicken. I usually don’t eat a lot of red meat because of the saturated fat content. However, opting for a more lean cut is always best; I went for a 95/5 – 1lb piece of ground beef. And as always, everything within moderation.
English Muffin Burger
1 Whole wheat english muffin
3-4 oz of lean beef
Red onion, thinly sliced
1/2 Avocado, mashed
Sea Salt & pepper
Directions: Season beef with a pinch of sea salt and pepper (don’t go crazy, the meat is already juicy and full of flavor). Cook 3-4oz of beef on grill or stove top, and be sure the internal temperature is over 160*F. Meanwhile, toast english muffin and top one side with mashed avocado & red onion slices, top the other with spinach. Place that patty in the middle and enjoy that lean healthy burger! Serves 1.
1 lb golden potatoes
1 tbsp Cajun seasoning (salt, garlic, paprika, onion & red pepper powder)
1 tbsp olive oil
Directions: Preheat oven to 400*F. Meanwhile cut potatoes length-wise, and then into thin matchsticks. Place the potatoes in a large bowl and toss with seasoning and olive oil. Bake for 45 minutes. Optional to broil 3-4 minutes for an extra crisp. (Joey crisped them without me knowing! I like soft fries 😉 ) Serves 3.
