Where do I even begin. These tacos are amazing, they’re creamy and spicy! After eating my Creamy Tuna Taco you won’t want your tuna any other way, I guarantee it.
I ate 2 of these tacos after an intense workout, 1.5 mile run + Strength workout at Bodi. This meal hit the spot and was perfect combo of protein, carbs, and fat to leave me satisfied.
My favorite part about making tuna is that you can throw anything in it and then just add greek yogurt & avocado to tie it all together.
Creamy Tuna Taco
- 1 can of tuna
1/2 cup plain greek yogurt
1 Avocado (1/2 smashed, 1/2 sliced for taco)
3 Celery stalks, diced
1/4 of medium Red Onion, diced
1/2 Apple, diced
1/2 small Cucumber, diced
1 Serrano pepper, diced
Small handful Cilantro, chopped
Small handful of Parsley, chopped
1/2 Lemon, juiced
Pinch of Salt, pepper, garlic powder
Middle Eastern Flatbread (from Trader Joes)
1. In a large bowl mix all ingredients except flatbread. Add more greek yogurt or avocado depending on desired creaminess.
2. Assemble taco: flatbread, creamy tuna, and sliced avocado topped with a sprig of parsley cuz you fancy!
Serves 2-3 (serving size 1 taco, unless you worked out really hard and are really hungry/pregnant then have 2)
