Cobb Salad + Homemade Greek Yogurt Dressing

It all started with a few hard boiled eggs sitting in the fridge. I didn’t want them to go to waste so I decided to make a Cobb Salad, it was the only sensible thing to do.

I’ve also been craving a salad (my Blueberry is going to be one healthy baby). I didn’t want the simple side salad you order at a restaurant, but the really good kind of salad that is full of color and fills you up.

I knew this salad was meant to be when I happened to have bacon in the fridge!!

I know this is my own recipe, but gosh damn it’s a really good salad. I’m not a huge salad lover, I prefer quinoa veggies bowls – but THIS Cobb Salad got me thinking. This may be the start of some bomb salad making.

You better make this salad and tell me ALL about it!!!

COBB SALAD

  • INGREDIENTS

  • 2 cups lettuce (1 cup mixed greens + 1 cup chopped romaine lettuce)
    1 slice of bacon, chopped
    2 oz of grilled chicken, sliced
    1 hard boiled egg, sliced
    1/2 oz sharp cheddar cheese
    1/3 cup cherry tomatoes, sliced
    1/2 small cucumber, sliced

DIRECTIONS

1. In a large bowl toss all ingredients and top with homemade greek yogurt dressing
Salad Serves 1

Greek Yogurt Dressing

  • INGREDIENTS

  • 1/2 cup nonfat plain greek yogurt
    1 lemon, juiced
    1-2 tsp almond milk
    1 tsp cilantro, chopped finely
    1 tsp parsley, chopped finely
    1/4 tsp dried dill
    Pinch of garlic powder
    Seasoned with Salt + Pepper

DIRECTIONS

1. In a small bowl, mix all ingredients. (Add more almond milk if you haven’t reached the desired dressing consistency)
Enough dressing for 3 salad
