Chia Banana Waffles

She LOVES these Chia Banana Waffles!!!  Watching her nibble on a whole waffle was the cutest thing ever.

Reasons why I love these waffles:
• Easiest breakfast to make a big batch of – this recipe makes over 20 waffles
• Super healthy – whole wheat flour, chia seeds (for the benefits read here), banana, coconut oil
• Cruz and I can both have it for breakfast (I refuse to make us both separate meals)
• Perfect quick snack
• Top it with almond butter & jelly, it’s soooo good 🙏🏽

Chia Banana Waffles

    • 2.5 cups whole wheat flour
      1/4 cup chia seeds
2-3 slightly mashed bananas (if you love bananas go for 3)
      1 tsp baking powder
      1/4 cup coconut oil
      2 eggs
3 cups unsweetened original almond milk
  • Makes 20-22 square 4×4″ waffles

1. In a small bowl slightly mash the bananas, leaving large chunks.

2. In a large bowl mix all ingredients. Add more almond milk if batter is too thick or add flour if it is too runny. You want the perfect mix of think and thin, similar to pancake batter.

3. Cook each waffle for 3-4 minutes. Let cool once cooked. Can store waffles in an air tight contain in the fridge or freezer (just toast when ready to eat).
