All I think about on a run, especially the last few miles, is what I’m going to eat afterwards.
On a 10 miler with Sarah this pizza came up. My mouth was watering after she said caramelized onions and goat cheese. That same week I got the ingredients and have been in love with this fancy pizza since then. I have made it a total of 7 times and it just keeps getting better.
This pizza is perfect for: date night at home or when friends/family come over for dinner
Caramelized onion, Fig & Goat Cheese Pizza
- 1 large onion, thinly sliced
2 tbsp avocado oil
16oz wheat pizza dough (pre-made from Trader Joes)
1 pear, thinly sliced
4oz goat cheese, crumbled
1/3 cup dried figs, sliced
2-3 cups arugula
- Serves 3-4 people
1. Cut onion into thin slices. Heat a large skillet on high heat with 2 tbsp of avocado oil and caramelize onions.
2. On a large surface, sprinkle flour and roll out dough.
3. Transfer rolled out dough onto a large baking sheet. Top with caramelized onions.
