Bulk Meal Preppin Monday’s
I much rather meal prep on Monday’s than the usual Sunday. I choose to spend my Sunday’s with hubs and baby Cruz!
And when I say meal prep I really mean bulk meal prep. I cook things in bulk rather than making the same individual meals for the week. I get sick of eating the same exact thing each day so I make tons of protein and carb options & lots of snacks.
This week’s bulk prep
•Oatmeal Chocolate Chip Cookies – Recipe here
•Turmeric Brown Rice – Recipe here (just add turmeric once cooked)
•Banana Chia Seed Pudding – Recipe here
•Black Bean Hummus
– Ingredients:1 can black beans, 2 tbsp tahini, 1 garlic clove, 2 tbsp cilantro, 1 jalapeno, ~1/8-1/4 cup water
– Directions: Combine all ingredients EXCEPT WATER and blend. Add few tablespoons of water at a time until you reach desired consistency. Topped with micro greens.
•Overnight Steel Cut Oats with Sautéed Apples + PB
– Ingredients: 1/4 cup steel cut oats, 3/4 cup unsweetened almond milk, sliced apple, 2 tbsp pb
– Directions: In a bowl combine steel cut oats and almond milk. Microwave for 2-3 mins, stirring every 30-45 seconds (keep a close eye so almond milk doesn’t boil over). Transfer oats to a bowl or mason jar that has a lid. Top with sautéed apples and peanut butter. Refrigerate overnight and heat up in the morning.

Bulk prepping was SUPER difficult today because of Cruz. Every second I put her down she started to cry. I would’ve loved to bulk prep a few more things (grilled chicken, roasted chickpeas) but I did the best I could.
She’s lucky she’s so damn cute!
